Pumpkin pie spice coffee is natively a fall recipe. We in India do not have fall as a season per se. Lets see what goes into it. Cinnamon, Ginger cloves etc. These are recipes which are warm. By warm i mean not in the terms of temperature but the feeling similar to covering yourself on a corner of a sofa with a blanket on a cold winter morning, watching TV or lazily just lying there like a log. These spice mix gives that warm fuzzy feeling and hence the natural normal way to go about enjoying it would be like that The reason why we started off this recipe section so quickly is because we wanted to be in time for the oncoming winters. We wanted to post it so that you can gather up all the ingredients and enjoy the delicious mix right from the starting of the winters Go ahead set up everything - blanket, a lazy TV channel nothing exciting , a kind of dim lighting set up, get yourself a pumpkin spice coffee and cozy up and sip and enjoy For those of you in Mumbai or Delhi - you have starbucks. Find a near by one. Yes it has pumpkin in it. We know it might sound weird. But go ahead believe and give it a try The pumpkin puree will add a certain amount of richness, a mild sweetness and an aroma to the beverage. The spice mix and pumpkin make it a delicious snack we should say than a regular cup of Joe. It takes some effort from you to bring home a pumpkin, make a puree and then make this BUT we still recommend this for a few reasons if not many
So dont give yourselves reasons for not trying it out. milk based coffee The intent is pretty clear The clean palette recipes are started at the starting for a reason. They had mostly single spices, were clear and simple on taste. If you would have tried them out then chances are very high that you would be now be able to differentiate the different tastes of the spices and what spice goes how example The subtle difference between the nutmeg and mace in taste the warmth of the AllSpice which gets added to the coffee - If warmth in taste sounds OK and not like some thrown in adjective you would are in a position to feel a taste Anyways so now the milk based ones are here. These mostly take a blend of spices. The milk blends and amalgamates all the flavors as a common base. Water is not very good at this act. So now the tastes your palette ill experience are a tad more complex and twisted in nature. So if you would have gone through the clean palette stage these recipes would be much much more enjoyable as you would see a whole new world of tastes intermingling in front you. For us Indians this is much more richer and rewarding because most of the spices are mainly restricted in our cooking to savory dishes , biryanis etc In a milk based coffee beverage its a whole new setting Go ahead take yourself on a ride of flavors and tastes. End of day the most important thing is, spice or no spice, you enjoy your coffee. This week we will put up a hyped and marketed recipe. The good thing is that its worth its hype and buzz. It does not owe its roots to India but the taste will definitely appeal to our pallete because most of the ingredients used are very commonly used by us in the daily cooking. Pumpkin pie spice This is of North American origin when pumpkin was used a filler in pies they made. Because pumpkins are naturally abundant in winters this pie was a symbol of harvest. Slowly the pie started being associated with harvest and winter. Pumpkin pie spice as the name indicates is the spice mix that goes into the making of the pie. Its been made very famous by Starbucks and is one of the most demanded drink by its customers. This time we will stagger the recipe posts with the general ones so that over the complete winter you get a list of recipes lined up. And the recipe which will come up are not as simple as the clean pallete ones AND remember they might look a bit off beat or unheard off but still we encourage, urge , request you to take the effort to make them. They will be worth the time and effort you invest in procuring the ingredients and making them We are excited about the recipes coming up and hence this post. The trend you see here is clear and simple. Clover is making French press precise. We believe the human guesstimate is a better way than a scientific degree or second. It’s more about the time, atmosphere and setting than the temperature setting. Stick to the good old South Indian Filter Coffee-SIF or the French press which will give great coffee. Just don’t forget to love Coffee or Wine No we are not writing off clover or the technological genius in it. Clover is patented; it’s bought out by Starbucks and is a precision French press. A French press or SIF would more than suffice a common daily coffee. There are ways of making it interesting and we take that cause up in our recipe section We see a hint of promotion in clover and the idea to make coffee like wine – an acquired taste- rare, special, reserve, single origin etc. We buy the point of making it special but not to the extent of making it exotic and putting it in the museum. It’s made special with many intangibles and exploration than with making an artistic thing scientific. It’s like dictating Da Vinci the proportions of eyes to nose in a statistically significant median number of people across the world with specific references to a cultural genre. See how horrible it sounds. Daily simple joys of life should be left so, at least we believe in it that way. The recipe section is a dedication to that simple daily joy. It makes daily coffee interesting, fun and exciting. We feel a point has been made and we end it here. A digital controller is used to control water temperature, contact time etc.
Water at the precise temperature is poured in to a cylinder-piston arrangement. After the contact time is done the piston moves up like French press and separates the coffee and the grounds and the coffee is collected into a cup. The major difference is that the coffee is not pressurized and of course because of the digital controller all times and temperatures are precise and perfect Ok so why be so scientific in a beautiful artistic coffee machine. The point they made is – different beans, different roasts, different flavors, different temperatures at which the beans release flavors so clover which can work at different temperatures and contact times and is gentle so as not to destroy the flavors of the coffee. Starbucks bought this system because it’s promoting single origin reserve coffee which will need a system like this. We have one last post in the clover series and that will have our take on Clover. I know its a bad joke. Excuse me for that. Its not available in India and i doubt it would be also as its registered bought out and patented if i am not wrong. Anyways just to know how are things evolving in the Coffee world understanding this makes sense. Here is what it is. Clover is the newest kid on the block in coffee brewing. While there are many methods of brewing coffee clover is claimed to be the best of the lot. Why would some one come up with a new coffee extraction machine anyway Let’s take a look at the best espresso machines out there. Personally I still prefer French press or the SIF – south Indian filter coffee but still. The espresso machine has a set temperature and pressure. When coffee grounds are put into a filter and locked into the machines the water at that set temperature and pressure moves through the grounds into the cup picking up the coffee flavors etc. on the way The drawbacks which the makers of clover saw were The contact time is not very dynamic – The time the water and coffee stay together. The pressure if it can be adjusted can change the contact time but is not precise The coffee is not blooming. It’s being forced rather to part with coffee decoction etc. Clover now takes – French presses concept and the sophistication of the espresso machine and mix them to create a new brewing system |
